DRY COCONUT BARFI

Makes 30 square pieces

Ingredients:

  • Dry desiccated coconut - 250 gm
  • Sugar - 250 gm
  • Milk - 1500 ml
  • Ghee - 2 tbsp
  • Cardamom powder - 1 1/2 tablespoon
  • Saffron leaves - 15 leaves

Method:

  1. Heat the ghee in a frying pan on a slow flame.
  2. Add the dry coconut to it. Once warm take it out and keep it separate.
  3. Scald the milk in a frying pan till it thicken (consistency of churned curd). Add the coconut to it and let it cool in a plate.
  4. Heat a mixture of sugar with about 100 ml of water and cook it for 4-5 minutes. Let it cool.
  5. Add the sugar syrup to the coconut mixture.
  6. Put cardamom powder and saffron leaves for flavor.
  7. Put the mixture in a one inch height tray and pat it till it sets.
  8. Once it cools down, cut it into one and half inch squares (about 30 pieces).
